Anche se è ormai abitudine proporre la Bonarda nella versione frizzante, abbiamo voluto produrre un piccolo quantitativo di vino fermo per noi ed i nostri clienti più affezionati. L’armonia del frutto ed un ampio bouquet di profumi incontrano una grande struttura, che dopo alcuni mesi di afinamento raggiunge l’equilibrio con la moderata freschezza.
Cascina Gilli has played an important role in rescuing two grape varieties, Freisa and Malvasia, which during the years had been unfairly neglected. Today we are focusing our commitment towards another grape variety, almost forgo1en, but which finds a soƒ spot in our hearts: Bonarda Piemonte. Usually Bonarda is produced slightly sparkling, but we have made a limited production of this Bonarda Piemonte in a still version, dedicated to our most loyal customers. The result is our Bonarda Sernù, a wine with a delicate bouquet, yet full and generous that seduces the taster. Its measured alcohol and acidity allow full scope to the admirable balance of its fruit.

Vinicicazione / Vinification
Le uve diraspate vengono fatte fermentare per sei−otto giorni ad una temperatura di 26˚ per ottenere una buona estrazione del colore, che presenta sfumature violacee. Dopo la fermentazione malolattica e la decantazione, il vino viene sottoposto a un processo di afinamento per alcuni mesi. Solo nella primavera successiva il prodotto viene imbottigliato e messo in commercio, dopo un ulteriore periodo di afinamento in bottiglia.
The grapes are leƒ to ferment six−eight days at a temperature of 26˚, so to obtain a good extraction of colour, which has purple hues. Aƒer the malolactic fermentation and the se1ling the wine stays partly in oak barrels and partly in stainless steel for over a year. Only the following spring the wine is assembled in the bo1le, where it se1les for some months.
